Our daily requirement for vitamin C is higher than for any other water-soluble vitamin. It is highly unstable and easily destroyed by the processed of storing, peeling, freezing and cooking and so it is not always possible to be sure how much is taken in the diet.
Vitamin C is needed for:
the production of collagen, a tough fibrous protein which is an integral part of the skin, tendons, bones, gums, teeth and blood vessels
its protective role as a free radical scavenger and antioxidant properties
a healthy immune system
helping to maintain normal blood fat and cholesterol levels
the growth and repair of tissue
